- Wash and peel potatoes before dicing them into bite sized cubes.
- Place potato cubes into a large pot of cold water and add 1/2 tablespoon of salt. Bring the water to a boil over medium heat.
- Once the water starts bubbling, reduce heat and allow potatoes to simmer until they're tender but not too soft. The potatoes should simmer for around 8 to 10 minutes.
- Drain the water after and put potatoes into a large bowl.
- In a separate bowl, whisk vinaigrette and mustard until the dressing has a smooth consistency.
- Drizzle in half of the vinaigrette mustard dressing over the warm potatoes and toss gently.
- Set the potatoes aside for 30 minutes. Do not refrigerate.
- Chop onions, celery, and radishes. Add the vegetables to the potatoes.
- Add the remaining vinaigrette mustard dressing over potatoes and toss together, adding salt and pepper to taste.
