Although you may be tempted to go out and buy a can of frothy nut milk to use in your cooking endeavors, it's advisable to learn how to make your very own almond milk from home.

Making your own milk is cheaper. It's also a healthier option since it won't contain the various chemicals found in commercial options.

Serves: 4 to 6 cups

  • Soak the almonds for 6 to 12 hours to soften them up for blending. Soaking will also allows them to break down better and thus impart more flavor to the almond milk.
  • When adequately soaked, drain the almonds and add them to a blender together with the salt and 4 cups of water.
  • Blend for several minutes until the almonds fully break down and form a milky solution with the water.
  • Add in the cinnamon, sweetener, vanilla, and the remaining water. Blend everything together until the mixture becomes smooth and frothy.
  • The milk solution formed contains some almond solids that gives it a chalky texture. So, for a smoother drink, strain the almond milk into a bowl using a mesh filter bag, metal strainer, or both. Once you've strained all the milk into the bowl, you'll be left with a chunk of almond pulp, which you can set aside to use in other dishes.
  • At this point, the milk is ready for use. However, it can be made creamier and thicker. If you wish for a creamier drink, separate the milk in half and heat one-half to just before the mixture bubbles. Next, mix the two halves and place in a refrigerator to cool before using.
