  • In a medium bowl, combine the cooked long grain brown rice and wild rice with lemon juice. Mix thoroughly with a wooden spoon. Be careful not to press on the rice as doing so will affect the texture.
  • In a large salad bowl, toss the rice mixture together with chopped parsley, green onions, celery, red bell pepper, and cabbage until well-combined.
  • In a separate small bowl, slowly whisk red wine vinegar and Dijon mustard together until combined.
  • Continue whisking the vinegar and mustard mixture and slowly drizzle in olive oil until the dressing thickens slightly.
